The asparagus season is almost there. Time to start thinking about how to eat these lovely vegetables. Fast, surprisingly easy and very delicious is this flemish way to make them. You can make it as a starter or a lunch.
Ingredients (2 persons):
- 500 gr asparagus
- 2 eggs
- a bunch of parsley
- 100 gr butter
- boil the eggs.
- Peel the asparagus, and cut the lower parts of them.
- chop the parsley finely.
- Cook the asparagus for 7-10 minutes until tender.
- Meanwhile, peel the eggs and separate the yolks and the whites. Chop them finely.
- Melt the butter.
- Serve as shown on the picture, and enjoy.
