Chicken chowmein is a nepales/chinese wok recipe that one of my favourite dishes when I am on Holiday in Nepal. You will find it mainly in restaurants with Tibetan or Buddhist owners. There is not one specific recipe, but you are free to experiment yourself. Below you will find my version of it. Another one of my favourite Nepali dishes is Malai Kofta. this comes the southern neighbours in India.


I made this chicken chowmein with rice noodles, as I had them available. The more classical version is normally made with wheat noodles. If you have no noodles available, you may also use spaghetti or linguine.

chicken chowmein is a nepali/chinese dish that is very healthy and easy to make. It is one of my favourite dishes when I am on Holiday in Nepal.

Ingredients

  • 200 gram brocoli
  • 400 gram chicken cut into strips
  • 200 gram mushrooms
  • 300 gram noodles I took rice noodles
  • 4 pieces carrots medium sized
  • 3 pieces paksoi
  • 1 piece yellow onion
  • 4 pieces spring onions
  • 2 cm ginger root
  • 2 cloves garlic
  • 1 piece red chili pepper
  • 2 pieces green jalapeños
  • 2 tablespoons lemon juice or to taste
  • 2 tablespoons soy sauce or to taste
  • salt, pepper, cumin, coriander to taste

Instructions

  1. Cut all the vegetables into pieces.

  2. Heat olive oil in a wok-pan and bake the chicken strips until done. Then put them aside.

  3. Meanwhile heat to water for baking the noodles as indicated on the packaging.

  4. Add some oil in the wok-pan and bake the ginger, garlic and onion for a few minutes.

  5. Add the other vegetables, except for the paksoi.

  6. Add the spices and the sauces and bake the vegetables al dente.

  7. Add the paksoi leaves to the noodles a few minutes before they are ready.

  8. When ready, transfer the noodles and the paksoi to the wok-pan with the vegetables. Also add the chicken strips and let the flavours mix for a few minutes.

As you might notice on the pictures, I use a Bora herd to cook. the special thing about it is that you don’t need a hood. It prevents the vapours from going up, as the airstream takes them down. It has a lot of advantages and is very easy. I am a great fan of this surprising innovation.

Last time in Kathmandu, we wanted to have dinner in a local restaurant on our last evening. This is not so easy, as all restaurants in Thamel focus on tourists. But finally we found the Potala restaurant in some small sidewalk. We had a great local meal there 🙂
