vegetarian eggplant burger with tomatoes
This vegetarian eggplant burger with tomatoes is the perfect vegetarian and healthy alternative for a classic burger. No meat, no bread, but burger!

Cut the eggplant into fine pieces, and steam them for 10 minutes.
Chop the shallot and the garlic.
Mix the eggplant, pine nuts, basil, shallot and garlic in the kitchen machine.
Add the egg and some breadcrumbs until you have a consistent dough. Like for patties.
Slice the tomatoes, and put them as a bottom layer on the tray.
Spread the eggplant dough over it, and finish with tomato slices on top.
Finish with grated cheese, chester cheese, halved cherry tomatoes, halved olives and mozzarella.
Bake for 30 minutes in a preheated oven at 180°C.
I prefer steaming the eggplants, because they keep their taste better. If you cook them, some taste will be lost to the cooking water.
