celery snack with roquefort and walnut

This post is about the outer ring of snacks on the picture above. The other one will be described in a following blogpost. The inspiration comes from a German booklet with party-recipes. I made this for Christmas and Sylvester, and received very positive comments on both occasions.

I like surprising combinations, and celery with roquefort was a very intriguing match I had to try out. Instead of walnuts you can also use pecans, depending on what you like and what is available. I mixed the roquefort with skyr to create the right consistency. Skyr is an Icelandic product, somewhere between yoghurt and cheese. I used it previously also in my creamy date snack with smoked mackerel. You can of course also use any other fresh cheese with a neutral taste.

  • 4 stalks celery
  • 125 gram roquefort
  • 125 gram skyr
  • 20 pieces halved walnuts
  • salt
  • pepper
  • cayenne pepper


  1. Cut the celery stalks in pieces of 2-3 cm.

  2. Mix the roquefort with the skyr and season with salt, pepper and cayenne pepper up to taste.

  3. Let the mixture cool down in the refrigerator for one hour

  4. Spread the mixture on the celery pieces with an injection bag.

  5. Garnish with the walnuts
